How To: Vegan Caramel Popcorn

It’s Feb. 26 – in other words, it’s Oscars Night. You’re prepared with your list of predictions and your cozy blanket in front of the TV, but you’ve forgotten one thing: the popcorn! Here’s a great recipe for delicious caramel popcorn for your eating pleasure. Not only can you make it in only 25 minutes, but it is also healthy, vegan, and incredibly delicious!

You’ll need:

10 cups of plain, unsalted, organic freshly-popped popcorn (I’d recommend using Eden Foods Organic Popping Kernels to get your popcorn)

2 tablespoons of vegan butter

1/2 teaspoons of salt

2 tablespoons of almond milk

1/2 cup of maple syrup

1/4 cup of cane syrup

1 teaspoon of vanilla

1/4 teaspoon of baking soda

A Spatula

A baking tray (or two)

Parchment paper

A pot

A bowl

Recipe:

1) Preheat your oven to 300 degrees. Place parchment paper on a baking tray or two. Place your popcorn in a bowl and set it aside.

2) Turn on the stove to medium-high heat and place a pot on it. In the pot, add the butter, half of the salt, the almond milk, maple syrup, cane syrup, and vanilla. Stir to combine the ingredients.

3) Let the ingredients come to a boil and then add the rest of the salt. Put in the baking soda. Be careful now, the mixture will change color and burn more easily. Reduce heat and stir quickly for one minute.

4) Take the pot off the stove and pour the mixture over the popcorn. With a spatula spread the mixture, distributing over the popcorn evenly.

5) Fill the baking tray with popcorn and spread it out evenly.

6) Put the baking tray in the oven and let it bake for 15 minutes.

7) Take it out and let it cool for a while on a fresh sheet of parchment paper. The popcorn will become crisp.
Pour it into a bowl and enjoy it during the Oscars, or save it for later in Tupperware.
