Recycling Thanksgiving Leftovers

Every year, Thanksgiving is a time to enjoy the company of family, while being in the presence of mountains of delectable cuisine. Yet, it is the combined amount of all these dishes that causes headaches once the table has been cleared. What do you do with all these leftovers? Do you dump them in your trashcan, and put good food to waste? Or will there be turkey sandwiches for lunch every day for the next month? Well, no, you shouldn’t waste food, and finishing the turkey doesn’t have to be so mundane. Here are some ways you can incorporate your Thanksgiving leftovers into everyday meals, which you can enjoy long after the holiday is over!

 

Turkey and Stuffing Casserole

Got a turkey you want to finish off? Melt 4 tbsp. of butter in a medium-sized pan on medium heat, and add in 4 tbsp. flour, 1 cup of milk, and ½ tsp. of salt in the butter, one at a time, and stir well. Pour in 1 cup of turkey broth, and allow the mixture to thicken a bit and before setting it aside. Place 3 cups of cubed turkey pieces in a casserole dish and pour the sauce on top, then spoon in any leftover stuffing you may have onto the casserole. Garnish the mixture with a ¾ cup of shredded parmesan cheese, and bake at 375℉ for 20 minutes. Let cool for 5 minutes before serving.

 

Stuffing Pancakes

If you’re aiming for a savory breakfast, your leftovers can cover that too. Beat an egg, and add 2 cups of stuffing, then stir mixture until well combined. Let the mixture sit for 1 to 2 minutes until the egg has been completely absorbed. Add butter to a pan and melt it over medium heat. Add the egg and stuffing mixture and shape it into pancakes and cook on each side until golden brown. Top with bacon and eggs.

 

Cranberry Relish

Do you still want to eat some turkey sandwiches, and find the cranberry sauce boring? Combine 1 can of cranberries to 1 can of drained, crushed pineapple, ¼ tsp. of apple pie spice, 1 pinch of ground cloves, and ¼ cup of chopped pecans. Stir until well combined. Serve as a side dish.

 

Vegetable Dish Frittatas

Don’t know what to do with those cold veggies you have sitting in the fridge? Preheat the oven to 350℉, then beat 6 eggs in a bowl. Add 1 handful of shredded cheese and sprinkle with some salt and pepper to taste. Add your vegetables to a 9×12 pan and pour the egg mixture on top, then bake for 15 minutes or until the center is set and the edges have browned slightly. Cut into squares, and serve.
