Sweet Marshmallow Bars

Thanksgiving is slowly approaching, which means that it’s time to eat some good food! These sweet potato marshmallows are easy to bake and taste delicious. Prepare to wow your taste buds!

Ingredients for the crust:

2 sleeves of graham crackers

1/4 cup of sugar

1 teaspoon of salt

10 tablespoons melted butter

 

Ingredients for the filling:

2 cups puréed sweet potatoes

3 tablespoons of sugar

3 large eggs

1 teaspoon of pure vanilla extract

1 teaspoons of ground cinnamon

1 1/2 cup of heavy cream

Mini marshmallows (for topping)

Directions:

  1. Preheat oven to 350 degrees.
  2. Line 8×8 pan with parchment paper.
  3. In a gallon ziplock bag, crush graham crackers, sugar, and salt using a rolling pin until they are fine crumbs.
  4. Put graham cracker mixture into a bowl and mix in butter until texture is similar to wet sand to form the crust.
  5. Press mixture into pan and bake for 10 minutes or until golden brown.
  6. Mix together all filling ingredients.
  7. Add filling to crust and bake for 48 to 50 minutes until center is no longer jiggly. Let it cool.
  8. Heat broiler.
  9. Cover bars with marshmallows and broil for about 2 minutes until golden.
  10. Let bars cool completely before serving.
